Christmas Cornish Hens

I have made cornish hens for Christmas before and they turned out great! It was like each person got their own little turkey. :)

This recipe comes from "The Lady and Sons Savannah Country Cookbook" by Paula H. Deen

Honey Game Hens: (Feeds 6)

Ingredients -

6 cornish hens (About 3/4 to 1lb. ea.)
4 cloves garlic, chopped
One 1in. piece of ginger, peeled and chopped
1/2 c. soy sauce
1/2 c. honey
2 tbsp. peanut oil
2tbsp. orange juice
1 tbsp orange zest, minced

Preparation:

The day before cooking:

Rinse hens, trim off excess fat, pat dry, and place in bowl
Put garlic and ginger in food processor and process until nearly smooth
In another bowl combine soy sauce, honey, oil, orange juice and zest
Add the garlic and ginger
Pour mixture over game hens coating well
Refridgerate overnight, turning in marinade several times

Day of Meal:

Preheat oven to 350 degrees
Place hens in shallow roasting pan, pour marinade on top
Bake for 1hr., basting every 15 min.
Remove hens to serving platter
Pour cooking juices into small heavy saucepan and boil for 5 min. or until sauce thickens
Pour over hens just before serving

Serve with sesame noodles or rice pilaf.
These hens can also be grilled, just remember to baste often!
